vegan cinnamon cranberry muffins ♥.















preheat oven to 400 degrees and set aside a 12 spaced muffin tin (lightly oil or line with cupcake holders).
in a large bowl stir together 1 1/2 cups of flour, 1/2 cup sugar, 2 tsp backing powder, 1 tsp ground cinnamon, and 1/4 tsp salt. in a blender/food processor, mix together 1/2 cup of oil, 1/4 cup soy milk, and about a half block of firm tofu. blend until tofu is completely mashed with other ingredients. mix into the bowl of other ingredients and mix in a generous handful of dried cranberries (crasins are bomb!). spoon into the muffin tin and pop em all into the oven for about 30 mins.
enjoy with a fat cup of soy milk :3
